Mediterranean Chicken Bake is a vibrant and flavorful dish featuring tender chicken breasts baked with a colorful mix of Mediterranean vegetables, olives, and herbs. This one-pan meal is easy to prepare and packed with fresh, wholesome ingredients.

Ingredients

  1. 4 boneless, skinless chicken breasts
    1 pint cherry tomatoes
    1 medium red onion, sliced
    1 red bell pepper, sliced
    1 zucchini, sliced
    1/2 cup Kalamata olives, pitted and halved
    3 cloves garlic, minced
    3 tablespoons olive oil
    1 teaspoon dried oregano
    1 teaspoon dried thyme
    Salt and freshly ground black pepper, to taste
    1/4 cup crumbled feta cheese
    Fresh parsley or basil for garnish

Instructions

Preheat oven to 400°F (200°C).

  1. In a large baking dish, arrange chicken breasts in the center.
  2. Surround chicken with cherry tomatoes, sliced onion, bell pepper, zucchini, and olives.
  3. In a small bowl, whisk together olive oil, minced garlic, oregano, thyme, salt, and pepper.
  4. Drizzle the olive oil mixture evenly over chicken and vegetables.
  5. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
  6. Remove from oven and sprinkle with crumbled feta cheese.
