Ingredients

  • 1 ½ lbs ground beef (80–85% lean)
  • 1 cup breadcrumbs
  • 1 large egg
  • ½ cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • 2 tbsp butter
  • 8 oz fresh mushrooms, sliced (white or cremini)
  • ½ small onion, finely chopped
  • 1 clove garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tsp Worcestershire sauce
  • Salt and black pepper to taste
  • 1 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic, Worcestershire sauce, ketchup, salt, pepper, and thyme. Mix gently until just combined.
  3. Shape into a loaf and place on the prepared baking sheet (or loaf pan). Bake for 45–55 minutes or until internal temperature reaches 160°F (71°C).
  4. While the meatloaf bakes, prepare the mushroom gravy. In a large skillet, melt butter over medium heat.
  5. Add mushrooms and onions; cook 8–10 minutes until tender and golden.
  6. Stir in garlic and cook for 30 seconds. Sprinkle flour over the vegetables and stir for 1 minute to make a roux.
  7. Gradually whisk in beef broth and Worcestershire sauce until smooth. Simmer until thickened, about 5 minutes. Season with salt and pepper.
  8. Once meatloaf is done, let it rest for 10 minutes before slicing. Serve with the mushroom gravy spooned over the top and garnish with parsley.
