Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chopped fresh parsley
  • 1 cup marinara sauce (store-bought or homemade)
  • 4 sub rolls
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (for topping)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine ground beef, breadcrumbs, 1/4 cup grated Parmesan, egg, garlic, oregano, basil, salt, pepper, and parsley. Mix well.
  • Shape the mixture into meatballs (1 to 1.5 inches in diameter) and place them on a parchment-lined baking sheet.
  • Bake the meatballs for 15-20 minutes or until golden and cooked through.
  • Heat marinara sauce in a saucepan over medium heat.
  • Once meatballs are done, add them to the sauce and gently coat them.
  • Split the sub rolls and place them on a baking sheet. Spoon meatballs and sauce into rolls, top with mozzarella and Parmesan.
  • Bake for 5-7 minutes, until cheese is melted and bubbly.
  • Serve hot, garnished with extra parsley if desired.
