Ingredients

  • 1 lb ground beef (or a mix of beef )
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce (store-bought or homemade)
  • 4 sub rolls
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional, for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, 1/4 cup Parmesan cheese, egg, garlic, parsley, oregano, salt, and pepper. Mix well until everything is evenly combined.
  3. Roll the meat mixture into meatballs, about 1 1/2 inches in diameter, and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through and browned on the outside.
  5. While the meatballs are baking, heat the marinara sauce in a large skillet over medium heat.
  6. Once the meatballs are cooked, carefully add them to the marinara sauce, stirring gently to coat. Let the meatballs simmer in the sauce for 5-10 minutes.
  7. Slice the sub rolls lengthwise but not all the way through, leaving one side hinged.
  8. Spoon the meatballs and sauce onto each sub roll, then top with shredded mozzarella cheese and a sprinkle of Parmesan cheese (if desired).
  9. Place the subs in the oven under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
  10. Remove the subs from the oven, serve hot, and enjoy!

Notes

  • Cheese options: You can substitute mozzarella with provolone, cheddar, or a blend of Italian cheeses for different flavors.
  • Spicy kick: Add crushed red pepper flakes to the marinara sauce for some extra heat.
  • Different meats: Use turkey or chicken for leaner meatballs, or even try a combination of beef and sausage for more flavor.
  • Vegetarian option: Make veggie meatballs using lentils, chickpeas, or plant-based meat substitutes.
  • Herb options: Experiment with other fresh herbs like basil or thyme to change the flavor profile.
