Matzo Brei Chilaquiles is a fusion of Jewish and Mexican comfort foods, combining crispy matzo brei with the zesty flavor of chilaquiles. A perfect breakfast or brunch dish that’s hearty, flavorful, and ideal for Passover or any day you crave something unique.

Ingredients

  • 4 matzo sheets, broken into bite-sized pieces
  • 4 large eggs
  • 2 tbsp cooking oil or butter
  • 1 cup salsa roja or salsa verde (homemade or store-bought)
  • 1/2 small onion, finely chopped
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 2 tbsp fresh cilantro, chopped
  • 1/4 cup crumbled queso fresco or feta cheese
  • Avocado slices (optional)
  • Lime wedges (optional, for serving)

Instructions

  1. Break the matzo sheets into bite-sized pieces and briefly rinse under cool water for 10–15 seconds to soften slightly. Set aside.
  2. Heat oil or butter in a large skillet over medium heat. Add chopped onion and sauté for 2–3 minutes until softened. Stir in the minced garlic and cook for 30 seconds more.
  3. Pour in the salsa and let it heat until gently bubbling.
  4. Add the moistened matzo pieces, tossing gently to coat in the sauce. Cook for 2–3 minutes, allowing them to soak up flavor while staying slightly crisp.
  5. In a separate bowl, whisk the eggs with salt and pepper. Pour them into the skillet and gently stir until eggs are just set, about 3–4 minutes.
  6. Remove from heat and top with crumbled cheese, cilantro, avocado slices, and a squeeze of lime.
  7. Serve immediately while hot.

Notes

  • For a spicier version, use chipotle salsa or add jalapeños.
  • Use kosher-for-Passover matzo and salsa to keep it holiday-friendly.
  • Best served immediately for crisp texture.
  • To reheat, warm gently in a skillet with a splash of salsa—avoid microwaving.
