Matcha Muffins are tender, moist, and delicately flavored with Japanese green tea powder. These vibrant green muffins are slightly earthy, mildly sweet, and make an energizing treat perfect for breakfast, brunch, or an afternoon snack.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 tbsp matcha powder (culinary grade)
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 2 large eggs
  • 3/4 cup milk or non-dairy milk
  • 1/3 cup unsalted butter, melted (or oil)
  • 1 tsp vanilla extract
  • Optional add-ins: 1/2 cup white chocolate chips, chopped nuts, or blueberries

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or grease lightly.
  2. In a large bowl, whisk together flour, matcha powder, baking powder, salt, and sugar.
  3. In another bowl, whisk eggs, milk, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined—avoid overmixing.
  5. Fold in optional add-ins such as white chocolate chips, nuts, or berries if desired.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let muffins cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

  • Make dairy-free by substituting plant-based milk and oil instead of butter.
