Mashed Cauliflower is a creamy, low-carb alternative to mashed potatoes, offering a smooth texture and mild flavor. It’s a healthy, easy-to-make side dish that complements a variety of meals.

Ingredients

  1. 1 large head cauliflower, cut into florets
  2. 2 tablespoons unsalted butter
  3. 1/4 cup heavy cream or milk (adjust for desired consistency)
  4. 2 cloves garlic, minced (optional)
  5. Salt, to taste
  6. Freshly ground black pepper, to taste
  7. Optional: grated Parmesan cheese, chopped chives or parsley for garnish

Instructions

Bring a large pot of salted water to a boil.

  1. Add cauliflower florets and cook until very tender, about 10-12 minutes.
  2. Drain well and transfer cauliflower to a food processor or blender.
  3. Add butter, cream, garlic (if using), salt, and pepper.
  4. Blend until smooth and creamy, stopping to scrape sides as needed.
  5. Adjust seasoning and consistency by adding more cream if desired.
  6. Transfer to serving bowl and garnish with Parmesan and fresh herbs if desired.
  7. Serve warm.

Notes

  1. Use cream cheese or sour cream instead of butter and cream for extra richness.
  2. Add roasted garlic for deeper flavor.
  3. Season with fresh herbs like rosemary, thyme, or dill.
  4. For vegan version, substitute butter and cream with plant-based alternatives.
