Marry Me Salmon is a quick, luxurious dish featuring tender seared salmon in a creamy, garlicky sun-dried tomato sauce with Parmesan and herbs. Elegant enough for date night and easy enough for a weeknight meal.

Ingredients

  • 4 salmon fillets (skin on or off)
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (in oil, drained)
  • 1/2 cup chicken broth (or vegetable broth)
  • 3/4 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1/2 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Season salmon fillets with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat. Sear salmon, skin-side down first if applicable, for 4–5 minutes per side. Remove and set aside.
  3. Reduce heat to medium, add butter to the skillet. Sauté garlic for about 1 minute until fragrant.
  4. Add sun-dried tomatoes and cook for another minute.
  5. Pour in chicken broth, scraping up browned bits from the pan, and bring to a simmer.
  6. Stir in heavy cream, Parmesan, Italian seasoning, and red pepper flakes. Simmer for 3–4 minutes until slightly thickened.
  7. Return salmon to the skillet, spoon sauce over fillets, and simmer gently for 2–3 minutes to warm through.
  8. Garnish with fresh herbs and serve hot with your favorite sides.

Notes

  • Don’t overcook the salmon — it should be flaky and moist.
  • Use freshly grated Parmesan for best flavor and melting.
  • Add baby spinach or cherry tomatoes to the sauce for extra veggies.
  • To make ahead, prep the sauce and store separately from the salmon.
