Marinated Mozzarella Balls are an easy and elegant appetizer featuring fresh mozzarella soaked in olive oil, garlic, herbs, and seasonings for a flavorful, make-ahead snack perfect for entertaining or charcuterie boards.

Ingredients

  • 16 ounces (450g) fresh mozzarella balls (bocconcini or ciliegine), drained
  • 1 cup extra virgin olive oil
  • 3 garlic cloves, thinly sliced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Drain the mozzarella balls and gently pat them dry with paper towels.
  2. In a mixing bowl, combine olive oil, sliced garlic, basil, parsley, dried oregano, red pepper flakes, lemon zest, salt, and black pepper. Stir well.
  3. Add the mozzarella balls and gently toss to coat evenly in the marinade.
  4. Transfer the mixture to a clean jar or airtight container, ensuring the mozzarella is fully submerged in the oil.
  5. Cover and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to develop.
  6. Before serving, let the mozzarella sit at room temperature for 20–30 minutes for best texture and flavor.

  • Overnight marinating provides the most flavor.
  • Add sun-dried tomatoes or olives for variation.
