Marinated Mozzarella Balls are tender bites of fresh mozzarella infused with olive oil, herbs, garlic, and bright citrus. This simple, no-cook appetizer delivers fresh Mediterranean flavor and is perfect for entertaining.

Ingredients

  • 16 ounces fresh mozzarella balls (bocconcini or ciliegine), drained
  • 1/2 cup olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh thyme or basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Drain the mozzarella balls and gently pat dry with paper towels.
  2. In a bowl or jar, whisk together olive oil, lemon juice, lemon zest, minced garlic, parsley, thyme or basil, oregano, red pepper flakes if using, salt, and black pepper.
  3. Add the mozzarella balls and gently stir to coat evenly.
  4. Transfer to an airtight container and refrigerate for at least 2 hours or overnight.
  5. Before serving, let sit at room temperature for 20–30 minutes.
  6. Stir gently and serve with bread, crackers, or as part of a cheese board.

Notes

  • Add sliced olives or sun-dried tomatoes for extra Mediterranean flavor.
  • Sprinkle crushed fennel seeds for subtle depth.
  • Drizzle lightly with balsamic glaze before serving if desired.
  • Substitute white wine vinegar for lemon juice if preferred.
  • Keep mozzarella submerged in marinade during storage.
  • Store in the refrigerator for up to 5 days.
  • Allow to come to room temperature before serving for best texture.
