Ingredients

  • 2 cups cooked jasmine or basmati rice
  • 1 ripe mango, diced

  • 1 red bell pepper, thinly sliced
  • 1/2 cucumber, sliced
  • 1/2 cup edamame or green peas (optional)
  • 1 avocado, sliced
  • 2 tablespoons fresh cilantro or mint leaves
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil

Instructions
