Melt the Chocolate: In a heatproof bowl, melt the milk and white chocolate together with the butter and golden syrup. You can do this either in a microwave, heating in 30-second intervals, or over a double boiler on the stovetop, stirring occasionally until smooth.
- Prepare the Base: While the chocolate mixture is melting, break the digestive biscuits into small pieces and place them in a large mixing bowl. Add the Maltesers and mini marshmallows to the bowl, and stir to combine.
- Mix the Ingredients: Once the chocolate mixture has melted, pour it over the biscuit, Malteser, and marshmallow mixture. Stir everything together gently to coat evenly, making sure that all the biscuits and Maltesers are well-covered in chocolate.
- Set the Rocky Road: Line a 9×9-inch square baking pan with parchment paper. Pour the mixture into the pan and press it down gently to ensure it’s even and compact.
- Chill: Place the pan in the refrigerator for at least 2 hours, or until the Rocky Road has set completely. If you’re in a hurry, you can freeze it for about 1 hour.
