Maltesers Rocky Road is a no-bake, indulgent dessert combining crunchy Maltesers, gooey marshmallows, and smooth chocolate, offering a perfect balance of sweet and salty flavors. It’s easy to make and ideal for parties, snacks, or simply a sweet treat.

Ingredients

  1. 200g Maltesers
  2. 200g milk chocolate (or dark chocolate for a richer flavor)
  3. 100g white chocolate (for a creamy contrast)
  4. 150g mini marshmallows
  5. 100g digestive biscuits (or graham crackers), broken into pieces
  6. 50g unsalted butter
  7. 2 tbsp golden syrup (or honey as a substitute)
  8. A pinch of sea salt (optional, for extra flavor)

Instructions

Melt the Chocolate: In a heatproof bowl, melt the milk and white chocolate together with the butter and golden syrup. You can do this either in a microwave, heating in 30-second intervals, or over a double boiler on the stovetop, stirring occasionally until smooth.

  1. Prepare the Base: While the chocolate mixture is melting, break the digestive biscuits into small pieces and place them in a large mixing bowl. Add the Maltesers and mini marshmallows to the bowl, and stir to combine.
  2. Mix the Ingredients: Once the chocolate mixture has melted, pour it over the biscuit, Malteser, and marshmallow mixture. Stir everything together gently to coat evenly, making sure that all the biscuits and Maltesers are well-covered in chocolate.
  3. Set the Rocky Road: Line a 9×9-inch square baking pan with parchment paper. Pour the mixture into the pan and press it down gently to ensure it’s even and compact.
  4. Chill: Place the pan in the refrigerator for at least 2 hours, or until the Rocky Road has set completely. If you’re in a hurry, you can freeze it for about 1 hour.
  5. Serve: Once set, remove from the fridge and cut into squares. If desired, sprinkle a pinch of sea salt on top for an extra flavor boost. Enjoy!

Notes

  1. Feel free to add your favorite mix-ins like nuts, dried fruit, or caramel drizzle for extra flavor.
  2. If you don’t have Maltesers, you can use M&Ms or any candy of your choice.
  3. Make sure to gently stir to avoid breaking the Maltesers while mixing.
