Malaysian-inspired Hokkien Mee is a savory stir-fried noodle dish featuring thick egg noodles, shrimp, chicken, and vegetables coated in a rich soy-based sauce. This quick wok-cooked meal delivers bold flavor and satisfying textures in every bite.

Ingredients

  • 12 oz thick egg noodles or Hokkien noodles
  • 8 oz shrimp, peeled and deveined
  • 8 oz chicken breast, thinly sliced
  • 3 cloves garlic, minced
  • 2 shallots, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 cup chicken broth
  • 2 cups napa cabbage or bok choy, chopped
  • 1 cup bean sprouts
  • 3 green onions, sliced
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper

Instructions

  1. Cook the noodles according to package instructions if needed, then drain and set aside.
  2. Heat vegetable oil in a large wok or skillet over high heat.
  3. Add minced garlic and chopped shallots and stir-fry until fragrant.
  4. Add the sliced chicken and cook until lightly browned.
  5. Stir in the shrimp and cook until they begin to turn pink.
  6. Add the cooked noodles to the wok and toss gently with the meat and aromatics.
  7. Pour in soy sauce, dark soy sauce, oyster sauce, and chicken broth.
  8. Toss the noodles well so they absorb the sauce evenly.
  9. Add the chopped cabbage or bok choy and cook until slightly softened.
  10. Stir in the bean sprouts and green onions.
  11. Season with sugar and white pepper.
  12. Continue tossing until everything is heated through and evenly coated with sauce.
  13. Serve hot garnished with additional green onions if desired.
