Crispy on the outside and creamy on the inside, these Mac and Cheese Bites turn classic macaroni and cheese into an irresistible finger food. Perfect for parties, snacks, or using up leftovers, they’re golden, cheesy, and crowd-pleasing.

Ingredients

  • 1 1/2 cups elbow macaroni
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk (whole or 2%)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella or Monterey Jack (optional)
  • Salt and black pepper to taste
  • 1/4 tsp garlic powder (optional)
  • 1/4 tsp paprika (optional)
  • 1/4 cup all-purpose flour (for coating)
  • 2 eggs, beaten
  • 1 cup breadcrumbs or panko
  • Cooking spray or oil (for air frying or baking)

Instructions

  1. Cook the macaroni according to package directions until just al dente. Drain and set aside.
  2. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to make a roux.
  3. Gradually whisk in milk until smooth and thickened, about 3–4 minutes.
  4. Stir in cheddar and optional mozzarella until melted. Season with salt, pepper, and optional spices.
  5. Combine cooked pasta with the cheese sauce and mix until evenly coated.
  6. Spread the mac and cheese mixture into a lined dish, press lightly, and refrigerate for 1–2 hours until firm.
  7. Once chilled, scoop portions and shape into 1–1.5 inch balls or squares.
  8. Coat each piece by rolling in flour, dipping in beaten egg, then coating with breadcrumbs. Press gently to help coating stick.
  9. Preheat air fryer to 400°F (200°C). Spray the basket with oil and arrange bites in a single layer.
  10. Air fry for 7–10 minutes, flipping halfway, until golden brown and crisp. Alternatively, bake at 425°F (220°C) for 15–20 minutes or deep fry for 2–3 minutes.
  11. Serve hot with dipping sauces like ranch, marinara, or spicy mayo.
