Low Carb Chicken Mushroom Soup is a comforting and creamy dish made with tender chicken, earthy mushrooms, and a rich, creamy broth. It’s low-carb, high in protein, and perfect for anyone following a ketogenic or low-carb diet, providing a satisfying meal with simple ingredients.

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, diced
  • 1 medium onion, diced
  • 2 cups sliced mushrooms (white or cremini)
  • 3 cloves garlic, minced
  • 4 cups chicken broth (preferably low-sodium)
  • 1 cup heavy cream
  • 1/4 cup cream cheese, softened
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the pot and set it aside.
  2. In the same pot, add the diced onion and sliced mushrooms. Cook for 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and the onions become soft.
  3. Add the minced garlic, dried thyme, and dried rosemary. Cook for another minute, allowing the garlic to become fragrant.
  4. Pour in the chicken broth and bring the mixture to a simmer. Let it cook for 5-10 minutes to allow the flavors to meld.
  5. Lower the heat and stir in the heavy cream and cream cheese, stirring until the cream cheese has melted and the soup becomes creamy.
  6. Add the cooked chicken back to the pot and season with salt and pepper to taste.
  7. Allow the soup to simmer for another 5-10 minutes until heated through.
  8. Garnish with freshly chopped parsley, if desired, and serve hot.
