Ingredients

  • ¼ cup milk
  • 1 cup breadcrumbs (Panko recommended)
  • 1 cup grated Parmesan cheese, divided
  • 1 teaspoon dried Italian seasoning
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil (for cooking)

Instructions

  • Marinate the Chicken: In a bowl, whisk together olive oil, ranch dressing, Worcestershire sauce, vinegar, lemon juice, minced garlic, and black pepper. Place chicken in a resealable bag, pour in the marinade, and refrigerate for at least 2 hours (overnight for best results).
  • Prepare the Chicken: Remove chicken from the marinade and pat dry. Mix flour with salt and pepper. In a separate bowl, whisk eggs and milk. In a third bowl, combine breadcrumbs, ½ cup Parmesan cheese, minced garlic, and Italian seasoning.
  • Bread the Chicken: Dredge each chicken breast in the seasoned flour, dip into the egg mixture, then coat with the breadcrumb mixture.
  • Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken for 4-5 minutes per side until golden brown. Transfer to a baking sheet.
