Loaded Poutine is a hearty twist on the classic Canadian comfort food, combining crispy fries, melty cheese curds, and savory brown gravy with a variety of indulgent toppings like bacon, green onions, and pulled meats.

Ingredients

  • 1.5 lbs frozen or fresh-cut French fries
  • 1.5 cups cheese curds (or chopped mozzarella)
  • 2 cups brown gravy (beef or mushroom-based)
  • 6 slices cooked bacon, crumbled
  • 2 green onions, sliced
  • Optional toppings: 1 cup pulled pork, 1/2 lb ground beef, sautéed mushrooms, caramelized onions, sliced jalapeños
  • Salt, to taste
  • Black pepper, to taste
  • Oil for frying (if using fresh fries)

Instructions

  1. Cook French fries according to package directions or fry fresh-cut potatoes until golden and crispy. Season with salt.
  2. While fries are cooking, heat brown gravy in a saucepan over medium heat until hot.
  3. Prepare toppings: cook and crumble bacon, slice green onions, and warm any additional optional toppings.
  4. Place hot fries in a large serving dish or platter.
  5. Sprinkle cheese curds evenly over the fries while they’re still hot.
  6. Pour hot gravy over the fries and cheese curds, letting the cheese melt slightly.
  7. Top with bacon, green onions, and any additional desired toppings.
  8. Serve immediately while hot.

Notes

  • Cheese curds melt best when fries and gravy are piping hot.
  • Use thick-cut fries or steak fries for better structure under toppings.
  • Mushroom-based gravy makes a great vegetarian alternative.
  • Customize with different meats, veggies, or regional flavors.
