Ingredients

  • 4 medium potatoes, diced
  • 1 lb ground beef
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup shredded cheddar cheese
  • 2 cups lettuce, shredded
  • 1/2 cup pickles, sliced
  • 1/4 cup diced onions
  • 1/3 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 2 tablespoons sweet pickle relish
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the diced potatoes with olive oil, salt, black pepper, garlic powder, and onion powder.
  3. Spread the potatoes evenly on the baking sheet and roast for 25–30 minutes, stirring halfway through, until golden and crispy.
  4. While the potatoes roast, heat a skillet over medium heat and cook the ground beef, breaking it apart as it cooks.
  5. Season the beef with salt, black pepper, garlic powder, and onion powder and cook until fully browned.
  6. In a small bowl, mix mayonnaise, ketchup, mustard, sweet pickle relish, paprika, garlic powder, and onion powder to make the sauce.
  7. Divide the roasted potatoes into serving bowls.
  8. Top the potatoes with the cooked ground beef.
  9. Add shredded lettuce, diced onions, sliced pickles, and shredded cheddar cheese.
  10. Drizzle the prepared sauce generously over the bowls.
  11. Serve immediately while warm.
