Ingredients

  • 68 flour or corn tortillas
  • 8 eggs
  • 2 tablespoons milk or cream (optional)
  • 1 cup cooked breakfast sausage, bacon, or chorizo (crumbled)
  • 1 1/2 cups diced potatoes or hash browns (cooked until crispy)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • Salt and pepper to taste
  • 1 tablespoon butter or oil (for cooking)

Instructions
