Lemon Tarragon Chicken Salad is a fresh and creamy dish combining shredded chicken with a zesty lemon and aromatic tarragon dressing. Light yet satisfying, it’s perfect for sandwiches, wraps, or served over greens.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1/3 cup mayonnaise
  • 2 tbsp Greek yogurt or sour cream (optional)
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh tarragon, finely chopped
  • 1/2 cup celery, finely diced
  • 2 tbsp shallot or red onion, finely chopped (optional)
  • 1 tsp Dijon mustard (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. In a mixing bowl, combine mayonnaise, Greek yogurt (if using), lemon juice, lemon zest, tarragon, Dijon mustard, salt, and pepper. Stir until smooth.
  2. Add cooked chicken, celery, and shallot or onion. Mix gently until fully combined and coated.
  3. Taste and adjust seasoning as needed with more lemon juice, salt, or pepper.
  4. Chill in the refrigerator for at least 30 minutes to let the flavors meld.
  5. Serve cold in croissants, lettuce cups, wraps, or over a bed of greens.

Notes

  • Use rotisserie chicken for a quick and easy option.
  • Fresh tarragon is preferred, but dried can be used in smaller quantity.
  • Add fruit like grapes or apples for sweetness and crunch.
  • Salad can be made a day ahead and stored in the fridge.
