Lemon pasta is a tangy, refreshing dish that pairs zesty lemon with the smooth comfort of pasta. This light yet indulgent recipe is quick to prepare and perfect for a delicious meal on busy evenings.

Ingredients

  • 8 oz pasta (spaghetti, fettuccine, or your favorite type)
    2 tbsp olive oil
    2 cloves garlic, minced
    1 lemon (zested and juiced)
    1/4 cup grated Parmesan cheese
    Salt and pepper to taste
    Fresh parsley, chopped (optional)

Instructions

  1. Cook the pasta: Cook the pasta according to the package instructions in a large pot of salted boiling water. Drain the pasta, reserving about 1/2 cup of pasta water for the sauce.
  2. Prepare the sauce: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add lemon: Add lemon zest and lemon juice to the skillet, stirring to combine. Let it cook for another 2 minutes to meld the flavors.
  4. Combine pasta and sauce: Toss the cooked pasta into the skillet with the lemon mixture. Add the reserved pasta water as needed to help coat the pasta with the sauce.
  5. Finish the dish: Stir in the grated Parmesan cheese and season with salt and pepper. Continue tossing until the pasta is evenly coated with the sauce.
  6. Garnish and serve: Garnish with freshly chopped parsley if desired, and serve immediately.
