Lemon Lush is a refreshing layered dessert with a buttery crust, creamy cheesecake layer, bright lemon pudding, and fluffy whipped topping. Smooth, cool, and perfectly balanced between sweet and tangy, it is ideal for gatherings and warm-weather occasions.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping
  • 2 (3.4-ounce) packages instant lemon pudding mix
  • 3 cups cold milk
  • 1 1/2 cups whipped topping
  • Lemon zest (optional, for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, softened butter, and powdered sugar until crumbly.
  3. Press the mixture evenly into the bottom of a 9×13-inch baking dish.
  4. Bake for 15–18 minutes until lightly golden, then allow to cool completely.
  5. In a mixing bowl, beat softened cream cheese and powdered sugar until smooth.
  6. Fold in 1 cup whipped topping until fully combined, then spread evenly over the cooled crust.
  7. In a separate bowl, whisk instant lemon pudding mix with cold milk until thickened.
  8. Spread the pudding evenly over the cream cheese layer.
  9. Top with 1 1/2 cups whipped topping and smooth evenly.
  10. Refrigerate for at least 3–4 hours until fully set.
  11. Garnish with lemon zest before serving if desired.
