Lemon Goldies are bright, chewy dessert bars bursting with fresh lemon flavor and a soft, buttery texture. Similar to brownies but infused with citrus instead of chocolate, these golden treats are sweet, tangy, and perfectly balanced.

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered sugar (optional, for glaze)
  • 12 tablespoons fresh lemon juice (optional, for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, whisk together the melted butter and granulated sugar until smooth.
  3. Add the egg, lemon juice, lemon zest, and vanilla extract, mixing until well combined.
  4. In a separate bowl, stir together the flour, salt, and baking powder.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined, avoiding overmixing.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 20–25 minutes, until the edges are lightly golden and a toothpick inserted in the center comes out with a few moist crumbs.
  8. Allow the bars to cool completely in the pan.
  9. If glazing, whisk together powdered sugar and lemon juice until smooth, then drizzle over cooled bars and let set before slicing.
