4 boneless, skinless chicken breasts or thighs
2 tablespoons olive oil
1/4 cup chicken broth
2 tablespoons lemon juice (freshly squeezed)
1 teaspoon lemon zest
2 tablespoons fresh dill, chopped (or 2 teaspoons dried dill)
2 cloves garlic, minced
Salt and black pepper, to taste
Lemon slices (for garnish)
Fresh dill sprigs (for garnish)
Season chicken breasts with salt and pepper on both sides.
Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5–6 minutes per side, until golden brown and cooked through.
Remove the chicken and set aside.
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
Add chicken broth, lemon juice, and lemon zest, scraping up browned bits from the pan.
Stir in chopped dill and bring sauce to a gentle simmer.
Return chicken to the skillet, spoon sauce over it, and simmer for 2–3 minutes to coat.
Garnish with lemon slices and fresh dill before serving.
Creamy Version: Add a splash of coconut milk or Whole30-compliant cream for a creamy sauce.
Grilled Option: Grill chicken and drizzle with lemon dill sauce after cooking.
Add Veggies: Toss in asparagus, spinach, or zucchini for a one-pan meal.
Herb Swap: Use parsley or basil in place of or along with dill for a different flavor twist.
