Ingredients
4 boneless, skinless chicken breasts
Salt, to taste
Black pepper, to taste
2 tablespoons olive oil
3 garlic cloves, minced
1/2 cup chicken broth
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
3 tablespoons unsalted butter
Fresh parsley, chopped (optional, for garnish)
Instructions
Season both sides of the chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium heat.
Add the chicken breasts and sear until golden brown on both sides, about 4–5 minutes per side. Remove and set aside.
In the same skillet, add the minced garlic and sauté for about 30 seconds.
Stir in the chicken broth, Dijon mustard, and lemon juice. Let it simmer for 2–3 minutes.
Reduce the heat to low and whisk in the butter until the sauce becomes smooth and slightly thickened.
Return the chicken to the skillet and spoon some of the sauce over the top. Simmer for another 5–7 minutes, or until the chicken is cooked through.
Garnish with chopped parsley if desired, and serve hot.
Notes
Use a meat thermometer to ensure chicken reaches 165°F internally.
For a creamier sauce, add a splash of heavy cream.
Store leftovers in the refrigerator for up to 3 days.
Reheat gently with a splash of water or broth to loosen the sauce.
For a low-carb meal, serve with cauliflower rice or steamed veggies.
