Lemon Asparagus Pasta is a light and refreshing dish featuring tender asparagus, a tangy lemon sauce, and perfectly cooked pasta. This vibrant meal is perfect for spring or summer, offering a balance of citrus and vegetables that’s both satisfying and easy to prepare.

Ingredients

  1. 8 oz pasta (spaghetti, fettuccine, or penne)
    1 bunch asparagus, trimmed and cut into 2-inch pieces
    2 tablespoons olive oil
    2 garlic cloves, minced
    1 lemon (zested and juiced)
    1/4 cup grated Parmesan cheese (optional)
    Salt and pepper to taste
    Fresh parsley for garnish (optional)

Instructions

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions, until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

  1. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the asparagus and sauté for 4-5 minutes, or until tender and slightly browned. Add the garlic and cook for 1-2 minutes more until fragrant.
  2. Add the cooked pasta to the skillet with the asparagus. Toss to combine, adding reserved pasta water to help create a sauce.
  3. Stir in the lemon juice and lemon zest. Season with salt and pepper to taste. If using, sprinkle with grated Parmesan cheese and toss until well combined.
  4. Serve the pasta immediately, garnished with fresh parsley and additional Parmesan cheese if desired.

Notes

  • This recipe can be made vegan by omitting the Parmesan cheese and using a dairy-free alternative or just extra lemon zest and herbs.
  • For a creamier version, add 1/4 cup of heavy cream or half-and-half along with the lemon juice.
  • Feel free to add grilled chicken, shrimp, or tofu for added protein.
  • For a spicy twist, add red pepper flakes or finely chopped chili peppers while cooking the garlic.
