A hearty leftover prime rib sandwich made with tender slices of beef, toasted rolls, creamy horseradish sauce, and melted provolone. It is a quick and flavorful way to transform leftover roast into a satisfying meal.

Ingredients

  • 12 oz sliced leftover prime rib
  • 4 hoagie rolls or sandwich rolls
  • 2 tbsp butter
  • 2 tbsp prepared horseradish sauce
  • 2 tbsp mayonnaise
  • 4 slices provolone cheese
  • 1/2 cup caramelized onions
  • 1 cup arugula or lettuce
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Slice the leftover prime rib thinly so it reheats quickly and stays tender.
  2. Heat a skillet over medium heat and add 1 tablespoon of butter.
  3. Warm the prime rib slices in the skillet for about 1–2 minutes per side until heated through, avoiding overcooking.
  4. Split the hoagie rolls and toast them in the same skillet with the remaining butter until lightly golden.
  5. Spread mayonnaise and horseradish sauce on the inside of each roll.
  6. Layer the warm prime rib slices onto the bottom half of each roll.
  7. Add a slice of provolone cheese on top of the meat and allow it to slightly melt.
  8. Top with caramelized onions and arugula or lettuce.
  9. Season with salt and black pepper to taste.
  10. Close the sandwich with the top half of the roll and serve immediately.

Notes

  • For a French dip variation, serve the sandwich with warm beef au jus for dipping.
  • Press the assembled sandwich in a skillet or panini press for a crispy cheesy melt.
  • Spread garlic butter on the rolls before toasting for extra flavor.
