Kiwi bread is a soft, moist quick bread made with mashed ripe kiwis for a tropical twist. Naturally sweet and slightly tangy, it’s perfect for breakfast, snacking, or dessert and easy to customize with add-ins like nuts or chocolate.

Ingredients

  • 1 cup mashed ripe kiwis (about 34 kiwis)
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon (optional)
  • 3/4 cup granulated sugar or brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil or melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).
  3. In a separate large bowl, combine the mashed kiwis, sugar, eggs, oil, and vanilla. Mix until well combined.
  4. Add the dry ingredients to the wet mixture and stir until just combined. Do not overmix.
  5. Fold in nuts or chocolate chips if desired.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Golden kiwis can be used for a sweeter flavor.
  • Mash kiwis with a fork for some texture, no need to puree.
  • Don’t overmix the batter—this helps the bread stay light.
  • Add-ins like coconut, pineapple, or raisins can enhance the tropical feel.
