Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ¼ cup unsalted butter, melted
  • 2 cans (14 ounces) sweetened condensed milk
  • ½ cup key lime juice (fresh or bottled)
  • 4 large egg yolks
  • 1 tablespoon lime zest (optional, for garnish)
  • Whipped cream (for topping)

Instructions

  • Make the crust: Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture into a 9-inch pie dish to form a crust. Bake for 10 minutes, then cool.

  • Prepare the filling: In a large bowl, whisk together sweetened condensed milk, key lime juice, and egg yolks until smooth. Pour this mixture into the cooled crust.

  • Bake the pie: Return the pie to the oven and bake for 15 minutes until the filling is set and firm.

  • Cool and chill: Let the pie cool to room temperature, then refrigerate for at least 3 hours (or overnight) to fully set.

  • Serve: Top with whipped cream and garnish with lime zest before serving.

Notes

  • This pie can be made in advance for better flavor, chilling overnight is recommended.
  • For a coconut twist, add ½ cup of shredded coconut to the crust.
  • The pie can be stored in the fridge for up to 3 days.
  • For a no-bake version, chill the crust for 30 minutes and assemble the filling to set in the refrigerator overnight.
