Key Lime Pie Cookies are a refreshing twist on the classic dessert, packed with tangy lime flavor and a graham cracker crumb topping that mimics the crust of a traditional key lime pie. These soft, chewy cookies are a perfect balance of sweet and tart, ideal for lime lovers.

Ingredients

  1. 1 cup unsalted butter, softened
    ¾ cup granulated sugar
    1 large egg
    1 teaspoon vanilla extract
    2 cups all-purpose flour
    1 teaspoon baking powder
    ¼ teaspoon salt
    Zest of 2 key limes (or regular limes)
    2 tablespoons fresh key lime juice (or regular lime juice)
    1 cup graham cracker crumbs (about 810 graham crackers)
    2 tablespoons granulated sugar (for graham cracker topping)
    2 tablespoons unsalted butter, melted (for graham cracker topping)
    ½ cup powdered sugar (for glaze)
    2 tablespoons fresh lime juice (for glaze)
    ½ teaspoon vanilla extract (for glaze)
    12 teaspoons milk (to adjust consistency of glaze)

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

  1. In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  2. Add the egg, vanilla extract, lime zest, and lime juice, mixing until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. For the graham cracker topping, mix together the graham cracker crumbs, sugar, and melted butter in a small bowl until the mixture is evenly combined and crumbly.
  5. Scoop about 2 tablespoons of cookie dough and roll it into a ball. Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Gently press a small amount of graham cracker topping onto the top of each dough ball, pressing lightly so it sticks.
  7. Bake for 9-11 minutes, or until the edges are golden brown and the centers are set. The cookies will remain soft and chewy in the center.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. For the glaze, whisk together the powdered sugar, fresh lime juice, and vanilla extract in a small bowl until smooth and pourable. Adjust the consistency by adding more powdered sugar or lime juice, if needed.
  10. Once the cookies have cooled, drizzle the lime glaze over the top of each cookie.
