Keto Tuscan Soup is a rich and creamy low-carb version of the classic Tuscan-style soup, combining tender chicken, fresh spinach, and a creamy broth. This hearty and flavorful dish is perfect for anyone following a keto lifestyle or anyone looking for a satisfying comfort meal.

Ingredients

  • 1 tablespoon olive oil
1 pound boneless, skinless chicken breasts or thighs, diced
    1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups fresh spinach, chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. In the same pot, add the diced onion and cook for 2-3 minutes until softened.
  3. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Pour in the chicken broth and add the diced tomatoes, basil, oregano, and red pepper flakes (if using). Bring to a simmer.
  5. Add the cooked chicken back into the pot and let the soup simmer for 10 minutes to allow the flavors to meld together.
  6. Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted.
  7. Lower the heat and stir in the heavy cream and Parmesan cheese. Continue stirring until the cheese has melted and the soup becomes creamy. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley or basil if desired.

Notes

  • You can swap chicken for sausage, turkey, or beef for a different flavor.
  • Add more vegetables like zucchini or mushrooms for extra nutrition.
  • For a dairy-free version, use coconut cream or almond milk instead of heavy cream, and omit the Parmesan or use a dairy-free alternative.
  • For a thicker soup, reduce the broth or blend part of the soup before adding the cream and cheese.
