Ingredients

  1. 1 lb ground sausage (breakfast or Italian)
    8 oz cream cheese, softened
    1/2 cup shredded cheddar cheese
    1 teaspoon garlic powder
    1/2 teaspoon onion powder
    Salt and pepper to taste
    2 cups shredded mozzarella cheese
    2 large eggs
    1 1/2 cups almond flour
    1 teaspoon baking powder

Instructions

Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  1. Cook sausage in a skillet over medium heat until browned and cooked through; drain excess fat.
  2. In a bowl, mix cream cheese, cheddar cheese, garlic powder, onion powder, salt, and pepper until smooth.
  3. Stir cooked sausage into the cream cheese mixture until combined.
  4. In a microwave-safe bowl, combine mozzarella cheese, eggs, almond flour, and baking powder. Microwave for 1 minute, stir, then microwave another 30 seconds until dough forms.
  5. Roll dough between parchment papers into a rectangle.
  6. Spread sausage mixture evenly over dough.
  7. Roll dough tightly into a log and slice into 1-inch pinwheels.
  8. Place pinwheels on the baking sheet and bake 15-18 minutes until golden.
  9. Cool slightly before serving.
