Keto Lasagna Soup is a hearty and satisfying low-carb alternative to traditional lasagna. It combines savory ground beef, tangy marinara, and melted cheese into a warm, comforting bowl of deliciousness, perfect for those following a ketogenic lifestyle.

Ingredients

1 tablespoon olive oil
1 pound ground beef
1 small onion, diced
3 cloves garlic, minced
1 can (14.5 ounces) diced tomatoes
1 can (6 ounces) tomato paste
4 cups beef broth
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
1 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
  2. Add the diced onion and garlic to the pot and cook for 2-3 minutes until softened and fragrant.
  3. Stir in the diced tomatoes, tomato paste, beef broth, basil, oregano, and red pepper flakes. Bring the soup to a simmer and cook for 10-15 minutes to allow the flavors to meld together.
  4. Season with salt and pepper to taste.
  5. In a separate bowl, combine the ricotta, mozzarella, and Parmesan cheeses.
  6. To serve, ladle the soup into bowls, then spoon a generous amount of the cheese mixture on top. Stir the cheese into the hot soup for a creamy, lasagna-like texture.
  7. Garnish with fresh basil or parsley if desired and serve hot.
