Ingredients
1 cup unsweetened almond milk (or coconut milk)
1/2 cup heavy cream
1/2 cup creamy peanut butter (no sugar added)
2 tbsp unsweetened cocoa powder
1/4 cup keto-friendly sweetener (erythritol, monk fruit, or stevia)
1 tsp vanilla extract
Pinch of salt
Instructions
In a blender or mixing bowl, combine almond milk, heavy cream, peanut butter, cocoa powder, sweetener, vanilla extract, and salt.
Blend or whisk until smooth and fully combined. Adjust sweetness to taste.
Pour mixture evenly into popsicle molds, leaving a bit of space at the top.
Insert sticks and freeze for 4–6 hours or until completely solid.
To release, run warm water over the outside of the molds briefly.
Serve immediately or store in the freezer for later enjoyment.
Notes
Use full-fat coconut milk instead of cream for a dairy-free version.
Swirl in extra peanut butter before freezing for added texture.
Add chopped peanuts or keto chocolate chips for crunch.
