A hearty and flavorful Kale Caesar Salad made with tender massaged kale, creamy homemade Caesar dressing, crunchy croutons, and freshly grated Parmesan. A nutritious and satisfying twist on the classic Caesar.

Ingredients

  • 6 cups fresh kale (curly or lacinato), stems removed and chopped
  • 1 teaspoon olive oil (for massaging kale)
  • 1 cup croutons
  • 1/3 cup freshly grated Parmesan cheese

For the Dressing:

  • 1/3 cup mayonnaise or Greek yogurt
  • 1 garlic clove, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon anchovy paste (optional)
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste

Instructions

  1. Wash and dry kale thoroughly. Remove stems and chop leaves into bite-sized pieces.
  2. Drizzle kale with olive oil and a pinch of salt. Massage gently for 2–3 minutes until softened and dark green.
  3. In a small bowl, whisk together mayonnaise, garlic, lemon juice, Dijon mustard, Worcestershire sauce, and anchovy paste (if using). Slowly drizzle in olive oil while whisking until smooth and creamy. Season with salt and pepper.
  4. In a large bowl, toss the massaged kale with the dressing until evenly coated.
  5. Add croutons and grated Parmesan cheese. Toss lightly to combine.
  6. Serve immediately or refrigerate until ready to eat.

Notes

  • Massage kale to soften texture and reduce bitterness.
  • Use Greek yogurt instead of mayonnaise for a lighter, tangier dressing.
  • For a vegan version, use vegan mayo and nutritional yeast instead of Parmesan.
