Instructions

Preheat oven to 375°F (190°C) and grease a 9-inch oven-safe skillet or baking dish.,Heat olive oil in the skillet over medium heat. Sauté onion, bell pepper, zucchini, and mushrooms for 5–6 minutes until softened.,Add garlic and spinach; cook for another 1–2 minutes until greens are wilted.,Shake the JUST Egg bottle well and pour it evenly over the vegetables in the skillet.,Season with salt and pepper and sprinkle vegan cheese on top, if using.,Transfer skillet to the oven and bake for 25–30 minutes, or until the frittata is set and golden.,Let cool slightly before slicing. Garnish with fresh herbs and serve.

  1. Use any vegetables you like or have on hand. Just make sure they’re cooked down to avoid excess moisture.,For a fluffier texture, don’t skip baking. However, you can cook it on the stovetop over low heat, covered, until set.,To make this oil-free, sauté vegetables using a splash of vegetable broth or water.
