Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • Juice of 1 large lemon
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup plain Greek yogurt (optional, for marinade)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, paprika, cumin, salt, pepper, and Greek yogurt if using.
  2. Add the chicken breasts to the marinade and coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Preheat the oven to 400°F (200°C) or heat a grill pan over medium heat.
  4. Remove the chicken from the marinade, allowing excess to drip off.
