Juicy Grilled Pineapple Chicken is a vibrant, tropical-inspired dish featuring tender chicken marinated in a sweet and tangy pineapple glaze, then grilled to juicy perfection. Paired with caramelized pineapple slices, it’s a perfect balance of smoky, sweet, and savory flavors—ideal for summer barbecues or easy weeknight dinners.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup pineapple juice
  • ¼ cup soy sauce or tamari
  • 2 tablespoons honey or brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger (optional)
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • Salt and black pepper, to taste
  • 4 fresh pineapple rings (for grilling)
  • Optional garnish: chopped cilantro or green onions

Instructions

  1. In a large bowl, whisk together pineapple juice, soy sauce, honey, garlic, ginger, olive oil, lime juice, salt, and pepper.
  2. Add the chicken to the marinade, cover, and refrigerate for at least 1 hour (or up to 8 hours for deeper flavor).
  3. Preheat the grill to medium-high heat and lightly oil the grates.
  4. Remove chicken from the marinade and grill for 5–6 minutes per side, or until the internal temperature reaches 165°F (74°C).
  5. Grill pineapple rings for 2–3 minutes per side until caramelized and lightly charred.
  6. Serve the chicken topped with grilled pineapple and a drizzle of boiled leftover marinade, if desired. Garnish with cilantro or green onions.

  • Marinate the chicken for at least 1 hour but no longer than 8 to maintain texture.
  • Use tamari for a gluten-free version.
