John Wayne Casserole is a hearty and flavorful Southwestern-inspired dish combining seasoned ground beef, black beans, cheese, and rice for a satisfying all-in-one meal perfect for family dinners or potlucks.

Ingredients

  1. 1 pound ground beef
    1 small onion, diced
    1 can (15 oz) black beans, drained and rinsed
    1 can (10 oz) diced tomatoes with green chilies
    1 cup cooked rice
    1 cup shredded cheddar cheese
    1 cup shredded Monterey Jack cheese
    1 teaspoon chili powder
    1 teaspoon cumin
    1/2 teaspoon garlic powder
    Salt and pepper to taste

Instructions

Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  1. In a skillet over medium heat, cook ground beef and diced onion until beef is browned and onions are soft. Drain excess fat.
  2. Stir in chili powder, cumin, garlic powder, salt, and pepper. Mix well.
  3. In a large bowl, combine cooked beef mixture, black beans, diced tomatoes, and cooked rice.
  4. Spread half of the beef and bean mixture into the baking dish. Sprinkle half of the cheddar and Monterey Jack cheeses.
  5. Layer the remaining beef mixture on top and finish with the remaining cheese.
  6. Bake for 25-30 minutes or until cheese is melted and bubbly.
  7. Let cool slightly before serving.

Notes

  1. Add corn, bell peppers, or jalapeños for extra vegetables and flavor.
  2. Increase chili powder or add hot sauce to make it spicier.
  3. Substitute pepper jack or queso fresco for cheese alternatives.
  4. Make vegetarian by using plant-based crumbles or extra beans instead of beef.
