Italian Love Cake is a moist and tender dessert made with ricotta cheese, almond flour, and bright citrus zest. It’s rich, subtly sweet, and perfect for celebrations or casual gatherings.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup almond flour or finely ground almonds
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 large eggs
  • 1 cup ricotta cheese
  • 1/2 cup olive oil or melted butter
  • 1 tbsp lemon zest
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • 1/4 cup milk or 1 extra egg
  • Optional: 1/2 cup slivered almonds
  • Optional: powdered sugar or citrus glaze for topping

Instructions

  1. Preheat oven to 175 °C (350 °F). Grease and flour a bundt or tube pan.
  2. In a large bowl, whisk together all-purpose flour, almond flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix ricotta cheese, eggs, olive oil or melted butter, lemon zest, orange zest, vanilla extract, and milk until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in slivered almonds if using.
  6. Pour batter into prepared pan and smooth the top evenly.
  7. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
  9. Dust with powdered sugar or drizzle with citrus glaze before serving.

  • Add almond extract for extra flavor depth.
  • Glaze with lemon or orange juice mixed with powdered sugar for added brightness.
  • This cake improves in flavor after a day of resting.
