Ingredients

  • For the salad:
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup pepperoncini, sliced
  • 1 cup cooked chicken breast, chopped
  • 1/2 cup salami, chopped
  • 1/2 cup provolone cheese, diced
  • For the dressing:
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, olives, and pepperoncini.
  2. Add chopped chicken, salami, and diced provolone cheese.
  3. In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, garlic powder, salt, and black pepper until emulsified.
  4. Pour dressing over the salad and toss thoroughly to coat evenly.
  5. Adjust seasoning if needed and serve immediately.
