Italian Beef is a Chicago-style sandwich featuring tender shredded beef slow-simmered in a herb-infused broth, served on crusty rolls and often topped with giardiniera or melted cheese. It’s bold, savory, and perfect for hearty meals.

Ingredients

  • 34 lbs chuck roast or top round beef
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 4 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Italian seasoning
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 2 bay leaves
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 68 Italian rolls or hoagie buns
  • Giardiniera or sliced pepperoncini (optional)
  • 68 slices provolone cheese (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear beef on all sides until browned. Remove and set aside.
  2. In the same pot, sauté onion and garlic until softened, about 3–4 minutes.
  3. Add beef broth, Worcestershire sauce, Italian seasoning, basil, oregano, bay leaves, crushed red pepper flakes (if using), salt, and pepper. Stir to combine.
  4. Return the beef to the pot. Cover and simmer on low for 3.5 to 4 hours, or until beef is fork-tender. Alternatively, cook in a slow cooker on low for 8 hours.
  5. Remove the beef and shred it with two forks. Return shredded beef to the pot and simmer in the juices for at least 15 minutes.
  6. Toast Italian rolls if desired. Load with shredded beef and top with giardiniera, pepperoncini, or provolone cheese.
  7. Serve sandwiches dry, dipped, or wet, depending on your preference.

  • Use sliced deli roast beef simmered briefly in the broth for a shortcut version.
  • Make it spicy with extra red pepper flakes or hot giardiniera.
  • Add sautéed bell peppers or mushrooms for extra flavor.
  • Broil the sandwiches briefly to melt provolone cheese for a toasty finish.
  • Great for meal prep—flavor improves after resting in the broth overnight.
