Ingredients

  • 4 fresh salmon fillets (about 6 oz each)
  • 3 tbsp Irish butter (or regular unsalted butter), softened
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped (optional)
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp Irish mustard (optional, for extra flavor)
  • Lemon wedges, for serving

Instructions

  • Preheat Oven – Set oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prepare Butter Mixture – In a small bowl, mix together softened butter, garlic, parsley, dill, lemon juice, salt, and pepper. If using, stir in Irish mustard for extra flavor.
  • Season the Salmon – Place salmon fillets on the baking sheet. Drizzle with olive oil and spread the butter mixture evenly over the top.
  • Roast the Salmon – Bake for 12-15 minutes, or until the salmon flakes easily with a fork. For a golden crust, broil for an additional 1-2 minutes.
  • Serve and Enjoy – Garnish with extra parsley and lemon wedges. Serve hot with your favorite Irish sides.

Notes

  • For extra crispiness, broil the salmon for the last 1-2 minutes.
  • For dairy-free, replace butter with olive oil or a dairy-free alternative.
  • Marinate the salmon for up to 30 minutes to enhance flavor, but avoid over-marinating.
  • To check doneness, use a thermometer—salmon should reach 145°F (63°C) internally.
