Irish Brown Bread is a hearty, rustic loaf made with whole wheat flour and simple pantry ingredients. With its dense crumb and nutty flavor, this traditional soda bread is perfect served warm with butter or alongside soups and stews.

Ingredients

  • 2 cups (240 g) whole wheat flour
  • 1 cup (125 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon brown sugar or 1 tablespoon molasses (optional)
  • 1 3/4 cups (420 ml) buttermilk
  • 2 tablespoons unsalted butter, melted (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a loaf pan or line with parchment paper.
  2. In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking soda, salt, and brown sugar if using.
  3. Make a well in the center and pour in the buttermilk and melted butter if using.
  4. Stir gently until just combined. Do not overmix.
  5. Transfer the dough to the prepared pan and smooth the top.
  6. Score a shallow line down the center with a sharp knife.
  7. Bake for 35–45 minutes, until firm and a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Sprinkle rolled oats on top before baking for added texture.
  • Substitute milk mixed with 1 tablespoon lemon juice or vinegar if buttermilk is unavailable.
  • Store at room temperature for up to 3 days or freeze for up to 2 months.
  • Warm slices in a toaster or oven to refresh texture.
  • Avoid overmixing to keep the crumb tender.
