Irish Beef and Guinness Stew is a rich and hearty dish made with tender chunks of beef slowly simmered in a savory broth flavored with Guinness stout, vegetables, and aromatic herbs. The dark beer adds deep malty notes that create a robust and comforting stew perfect for cozy dinners.

Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 medium potatoes, diced
  • 2 celery stalks, chopped
  • 3 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 cup Guinness stout
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Season the beef with salt and black pepper, then brown it on all sides. Remove and set aside.
  3. In the same pot, cook the chopped onion until softened.
  4. Add the garlic and cook for about 1 minute until fragrant.
  5. Stir in carrots, celery, and potatoes, cooking for several minutes.
  6. Sprinkle flour over the vegetables and stir well to coat.
  7. Add tomato paste and cook briefly to enhance the flavor.
  8. Slowly pour in the Guinness stout and beef broth while stirring.
  9. Add Worcestershire sauce, thyme, and bay leaves.
  10. Return the beef to the pot and bring the mixture to a gentle simmer.
  11. Cover and cook on low heat for about 1½–2 hours until the beef becomes tender and the stew thickens.
  12. Remove bay leaves and adjust seasoning if needed.
  13. Garnish with fresh parsley and serve warm.

  • Allow the stew to simmer slowly to ensure the beef becomes tender.
  • If the stew becomes too thick, add a small amount of broth while reheating.
  • Serve with crusty bread, mashed potatoes, or buttered noodles.
