Instant Pot Pancake Bites are fluffy, bite-sized pancakes made in a silicone egg-bite mold using the Instant Pot. Perfect for quick breakfasts, meal prep, or kids’ snacks, these mini pancakes are soft, easy to customize, and cook in minutes without flipping.

Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Nonstick cooking spray (for greasing the mold)
  • Optional: blueberries, mini chocolate chips, diced strawberries, or 1 teaspoon cinnamon

Instructions

  1. Grease a silicone egg-bite mold thoroughly with nonstick cooking spray.
  2. In a bowl, whisk together flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together milk, egg, melted butter, and vanilla extract until smooth.
  4. Combine wet and dry ingredients and stir gently until just mixed; do not overmix.
  5. Pour the batter into each mold cavity, filling about ¾ full.
  6. Add desired mix-ins such as fruit or chocolate chips.
  7. Pour 1 cup of water into the Instant Pot and place a trivet inside.
  8. Place the mold on the trivet and cover it with foil or a silicone lid.
  9. Lock the lid, set the valve to “Sealing,” and cook on high pressure for 7 minutes.
  10. Allow a 5-minute natural pressure release, then quick release any remaining pressure.
  11. Carefully remove the mold, let it cool slightly, then pop out the pancake bites.
  12. Serve warm with syrup, honey, or your favorite toppings.

Notes

  • Do not overmix the batter to keep the bites light and fluffy.
  • Grease the silicone mold thoroughly to prevent sticking.
  • To freeze, arrange cooled bites on a baking sheet, freeze until solid, then transfer to a freezer bag.
  • Reheat in the microwave for 20–30 seconds or in the oven at 350°F (175°C) for 5–7 minutes.
  • For a savory version, omit sugar and vanilla and add cheese, herbs, or diced ham.
