Instant Pot Beef Tips are a hearty and comforting dish made with tender chunks of beef cooked quickly in a rich, savory gravy. The Instant Pot allows the beef to become incredibly tender in a fraction of the time normally required for braising. Served with mashed potatoes, rice, or noodles, this flavorful meal is perfect for busy weeknights or family dinners.

Ingredients

  • 2 lbs beef stew meat or beef chuck, cut into cubes
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons tomato paste
  • 1 cup mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Turn the Instant Pot to the sauté setting and heat olive oil.
  2. Add the beef cubes and brown them on all sides. Remove and set aside.
  3. In the same pot, cook the chopped onion until softened.
  4. Add the minced garlic and cook for about 1 minute until fragrant.
  5. Stir in the tomato paste and cook briefly to deepen the flavor.
  6. Sprinkle flour into the pot and stir well to combine.
  7. Slowly pour in the beef broth while stirring to create a smooth sauce.
  8. Add Worcestershire sauce, soy sauce, paprika, thyme, salt, and black pepper.
  9. Return the beef to the pot and add the sliced mushrooms.
  10. Close the lid and set the Instant Pot to pressure cook on high for 25 minutes.
  11. Allow natural pressure release for 10 minutes, then carefully release remaining pressure.
  12. If needed, mix cornstarch with water and stir it into the pot using the sauté setting to thicken the gravy.
  13. Cook for a few minutes until the sauce thickens.
  14. Garnish with fresh parsley before serving.

Notes

  • A splash of red wine can be added before pressure cooking for deeper flavor.
  • Carrots, peas, or green beans can be added for a more complete meal.
  • Serve over mashed potatoes, rice, or egg noodles.
