Instant Pot Banana Bread Bites are moist, tender, and flavorful mini banana breads cooked quickly in your Instant Pot. These bite-sized treats capture all the warm, comforting flavors of classic banana bread in a fun, easy-to-make form perfect for snacks or breakfast.

Ingredients

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
3 ripe bananas, mashed
1/2 cup brown sugar or coconut sugar
1/4 cup melted butter or coconut oil
1 large egg
1 teaspoon vanilla extract
1/2 cup chopped walnuts or pecans (optional)
1/2 cup mini chocolate chips (optional)

Instructions

In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.

  1. In another bowl, mix mashed bananas, sugar, melted butter, egg, and vanilla until smooth.
  2. Gradually add dry ingredients to the wet mixture, stirring until just combined. Fold in nuts and/or chocolate chips if using.
  3. Grease silicone molds or small ramekins that fit inside your Instant Pot.
  4. Fill molds about 3/4 full with batter.
  5. Pour 1 cup of water into the Instant Pot and place the trivet inside.
  6. Arrange molds on the trivet. Cover the Instant Pot and seal the valve.
  7. Cook on Manual (High Pressure) for 20 minutes.
  8. Allow a natural pressure release for 10 minutes, then quick release any remaining pressure.
  9. Carefully remove molds and let the banana bread bites cool before serving.

Notes

  1. Add shredded coconut or dried fruit for extra texture.
  2. Use gluten-free flour blend to make gluten-free bites.
  3. Substitute sugar with maple syrup or honey (adjust liquid accordingly).
  4. Add a pinch of nutmeg or allspice for additional warmth.
  5. Top with a drizzle of cream cheese glaze or nut butter.
