Honeycrisp Salad is a crisp, sweet, and tangy salad made with Honeycrisp apples, mixed greens, nuts, cheese, and dried fruit, all tossed in a flavorful vinaigrette. Perfect for fall or any time of year.

Ingredients

2 Honeycrisp apples, thinly sliced
6 cups mixed greens or arugula
1/2 cup candied pecans or walnuts
1/4 cup dried cranberries or cherries
1/3 cup crumbled goat cheese or feta
1/4 red onion, thinly sliced (optional)
1/4 cup apple cider vinaigrette or balsamic vinaigrette
Salt and pepper to taste

Instructions

  1. Wash and dry the mixed greens and place in a large salad bowl.
  2. Thinly slice the Honeycrisp apples and add to the bowl.
  3. Add crumbled cheese, candied nuts, dried cranberries, and red onion (if using).
  4. Drizzle with vinaigrette and toss gently to combine.
  5. Season with salt and pepper to taste.
  6. Serve immediately or chill for up to 15 minutes before serving.

Notes

  • Toss apples in lemon juice if prepping ahead to prevent browning.
