Honey glazed carrots are a simple, elegant side dish featuring tender carrots coated in a buttery honey glaze. Their sweet-savory flavor and vibrant color make them perfect for everyday dinners or holiday feasts.

Ingredients

  • 1 pound carrots (whole, baby, or sliced)
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Peel and slice carrots into evenly sized pieces, or use baby carrots. Slice diagonally for a more elegant presentation if desired.
  2. Place carrots in a large skillet or saucepan and add enough water to just cover them. Bring to a boil, then reduce heat and simmer for 8–10 minutes, or until tender-crisp. Drain and set aside.
  3. In the same pan, melt butter over medium heat. Stir in honey, salt, and pepper.
  4. Return the carrots to the pan and toss to coat. Cook for 3–5 minutes, stirring often, until glaze thickens slightly and carrots are shiny and caramelized.
  5. Transfer to a serving dish and garnish with chopped parsley, if desired. Serve warm.

Notes

  • Use baby carrots for convenience—no peeling or slicing required.
  • Don’t overcook the carrots; they should remain slightly firm for best texture.
  • Maple syrup can be substituted for honey for a different flavor.
  • Fresh herbs like thyme or rosemary add extra depth to the glaze.
  • Add a splash of citrus juice or zest for brightness.
